Fluffy Pancakes

Like many families with young children, we have a plethora of standard pancake recipes: apple pancakes, banana-chocolate chip pancakes, coconut pancakes, blueberry pancakes, etc. One of our favourite is a simple Fluffy Pancakes recipes, adapted from allrecipes.

Fluffy Pancakes

3/4 c. milk (we use almond)

2 Tbsp white vinegar

1 3/4 c unbleached (white) flour

1/4 c whole wheat flour

2 Tbsp sugar

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 Tbsp powdered egg replacer, like Ener-G egg replacer (or 1 egg)

2 Tbsp canola oil

Mix milk and vinegar, set aside. Combine dry. Add soured milk. Whisk as briefly as possible (just until lumps are gone). Cook as usual for pancakes, about 1/4-1/2 cup scoops, on your grill.
